I have made this recipe a million times before but I always thought it is too simple to share. In the last few months since my daughter Lily arrived I have made it what it seems like every week. She loves cheese and when I don't know what to cook for her this is the safest options. Is ready in half an hour and tastes amazing. I personally think it is better the next day so make sure you make enough to last you for a couple of days.
- 250 g macaroni
- 600 ml milk
- 40 g butter
- 40 g plain flour
- 250 g cheddar cheese
- optional I add cooked bacon to my macaroni
Cook the macaroni in boiling salted water for 8 to 10 minutes. Drain and set aside.
Melt the butter in a saucepan then add the flour mixing well until it forms a soft dough. Add the milk gradually, a little at a time and cook for 10-15 minutes until thickened and smooth.
Remove the sauce from the hob add in 175 g of the cheddar cheese and mix until the cheese is
melted.
Add the macaroni to the sauce and mix well. Transfer to a ovenproof dish.
Sprinkle the rest of the cheese on top, place under a hot grill and cook until the cheese in slightly brown and bubbling.
