Squid In Spicy Tomato Sauce with Black Olives


      I know that not everyone likes squid but for all of you out there that do, I recommend this recipe with all my heart. One of the benefits of eating squid is that compared with other shell fish it has a low mercury content.

For this recipe you need:

   - 6 squids cleaned and washed
   - 1 onion
   - 1 small red pepper
   - 2 garlic cloves
   - 1 tin of chopped tomatoes
   - 100 g black olives
   - 1/2 tsp dry chilly flakes
   - fresh chopped parsley

      Fry the chopped onion and garlic until soft then add the red pepper, chilly flakes and the tin tomatoes and bring to the boil.
      Score the squid gently and place it in the pan. Cover with a lid or aluminum foil and leave to simmer for 15-20 minutes or until the squid is cooked.


Half way through add the black olives and mix.


When the squid is cooked add a pinch of salt and pepper, and the chopped parsley and serve hot.
