This is nice, fresh and quite tasty. A very nice change form the regular pasta salad. Enjoy!
Ingredients:
-1 1/2 cups dry elbow macaroni
-1 (20 oz) can pineapple tidbits-reserve 1/2 cup of juice for dressing; drain the rest
-8 oz cubed ham
-5 green onions, chopped
For dressing:
-reserved 1/2 cup pineapple juice
-1/2 cup mayonnaise
-1/4 cup plain Greek yogurt
-1 Tbs apple cider vinegar
-1 Tbs sugar
Directions:
Cook macaroni according to package directions. Drain, rinse with cold water, drain again and place in large pasta bowl. Add drained pineapple, ham and onions. Mix.
In a separate bowl, combine dressing ingredients. Mix well and pour over pasta mixture. Mix again and enjoy!
