Croissant With Pecan Nuts And Chocolate

   A bright Sunday morning, sun is shining and flowers are in bloom. It smells like freshly ground coffee and warm croissants. I laid on the sofa took that book I started a few weeks ago and didn't manage to finish, and enjoy the quiet. This is my perfect Sunday morning.

For the dough:
   - 250 g flour
   - 125 g butter
   - 125 g yogurt
   - 1 tsp baking powder
   - 2 tsp vanilla sugar
   - pinch of salt
For the cream:
   - 1 hand full ground pecan nuts
   - 2 tsp hot chocolate powder
   - 2 tbsp melted butter

Melt the butter on a bain-marie and leave it to cool (don't melt in the microwave or straight on the heat as the dough will change texture), when the butter is cool add on top of the flour with the yogurt, baking powder, pinch of salt and vanilla sugar.

Mix everything together until you get a soft dough that doesn't stick to your hands.

Cut the dough in half and roll in two 2 mm sheets. Cut each sheet once vertically and once horizontally (in the shape of a + ) then cut each quarter in half again. Mix the crushed pecan nuts with the hot chocolate powder and melted butter and place one tsp on each dough triangle.

Roll the croissants from the wider part down. Place them in a tray brushed with a bot of oil and a sprinkle of flour. Don't need to brush them with anything.













Bake in the preheated oven at 180 C for 15 - 20 minutes or until the are golden brown. Take out of the oven when done and sprinkle with a bit of icing sugar.
