Black And White Shortbread Biscuits

Hello friends, I know it has been a while since I posted something but your wait was not in vain. I made this chess biscuits yesterday and managed to hide a few to take to the girls at work as I wanted to hear a different opinion than the one of my family and let me tell you they were amazed. Be sure you will surprise your friends and family with these biscuits.

   - 150 g butter
   - 80 g icing sugar
   - 200 g flour
   - 1 tsp hot chocolate powder (you can use cocoa, i didn't have any)
   - pinch of salt
   - 1 egg white
   - a ruler

Mix the butter with the icing sugar until well combined.

Add the flour with the pinch of salt and mix until you get a soft dough. Split the dough in equal parts, one part mix with the chocolate powder then cover each half in cling film and put in the fridge for at least 2 hours.

When the dough is firm to the touch take it out of the fridge, cover a board in cling film and form two rectangles 1 cm thick one white and one black (19X8 cm). Try to make it as perfect as you can and the same size. Cut the sheets in slices longways, each 1 cm in size. On a different board covered in clingfilm as well put a brown slice in between 2 white ones brushing the sides with a little touch of egg white (make sure you don't put to much as it will be too slippery and won't stick together). On top of that layer make another one with the white slice in the middle in between 2 brown ones and the final layer again,brown in the middle and white ones on both sides. At this stage it should look like a square salami, mine was 19 cm long. Cover in the cling film and put in the fridge until firm again. Cut in slices 1 cm thick and place on a tray lined with grease proof paper. Bake in the oven for 15 minutes on gas 4.

When they are still soft to the touch take out of the oven and leave to cool on a cake rack. They are extremely delicious with a cup of tea, but that might me just me :)
