What can I say, chocolate and cream cheese is definitely my favorite combination in a cake. Especially when you have a fluffy sponge with a creamy filling, mmm devine.
For the sponge:
- 7 eggs
- 7 tbsp of flour
- 7 tbsp sugar
- 4 tbsp oil
- 100 g melted dark chocolate
- a pinch of salt
- 1 tsp baking powder
For the cream:
- 100 g cream cheese
- 50 g butter
- 3 tbsp powdered sweetener
For decorating:
- 100 g dark chocolate
- 50 ml double cream
For the sponge:
Mix the egg whites with a pinch of salt until they form peaks and triple in volume. Add the sugar, bit by bit and keep mixing until they get a shiny finish. Mix the egg yolks with the oil for about 5 minutes then fold in the egg whites until well incorporate.

Fold in the flour then the melted chocolate. When all the ingredients are well combined pour the cake batter in a round cake tin lined with baking paper and bake in the oven on a medium heat for 20 - 25 minutes or until a skewer comes out clean when inserted in the middle of the cake.

When the sponge is baked take it out of the oven and leave to coll slightly in the tin for about 10-15 minutes then take out and leave to cool completely. When cooled cut into 2 or 3 sheets depending on how risen your cake is.

For the Cream:
Mix the cream cheese with the butter and sweetener until well combined and creamy. Spread the cream in between the sponge layers. At the end decorate with the dark chocolate melted with the double cream. Put in the fridge for a few hours or better over nights.
