Cheesy Baked Choux Pastry

This is a real great snack or a brilliant appetizer, cut in half with a little bit of smoked salmon. This is the healthier version of the deep fried cheesy balls for those days when you fancy some comfort food. This recipe is so easy and the secret is mixing, so if you know how to do that you are a safe.

   - 150 g cheese
   - 150 g flour
   - 2 eggs
   - 100 ml water
   - 80 g butter
   - pinch of salt

Boil the water with the butter until melted and water is boiling.
Add all the flour at once and mix fast until well combined. For this recipe you have to work quite quick before it gets cold.
When the dough comes together and forms a ball, fold in the cheese.
Add the eggs, one by one and mix until you get a soft and sticky dough.

   Forms little balls and arrange them on a tray lined with baking paper. You can sprinkle a few sesame or poppy seeds, but I can assure you they are as delicious without.

   Bake in the oven on a low heat for 15 - 20 minutes or until golden brown.
