Now that winter is coming these little apple strudel are perfect with a hot cup of tea. They definetely make me think of Christmas.
- 2 apples
- 1 puff pastry sheet
- 50 g mixed nuts (whole nuts, peanuts and almond)
- 1 tsp cinnamon
- a pinch nutmeg
- 3 - 4 tbsp sugar
- 1 egg yolk and a bit of milk
Peel the apples and cut them in small cubes. Mix the apples with the chopped nuts, sugar, cinnamon and nutmeg.

Cut the puff pastry into squares 5 - 7 cm thick, add a tbsp of the apple mixture on one of the corners and cover with the opposite corner in order to get a triangle. Push down the edges with a fork to seal them.

Brush the triangles with the egg yolk mixed with a bit of milk then sprinkle some granulated sugar on top.

Bake in the preheated oven at 180 C / gas 4 for 20 - 25 minutes or until golden brown.
