Plum And Blueberry Upside Down Cake


        Last Saturday my husband's Mum came around for dinner and I thought it would be nice to bake a cake. And I couldn't think of anything better than an upside down cake.

   - 150 g plain flour
   - 1 1/2 tsp baking powder
   - pinch of salt
   - 50 g butter
   - 50 g soft brown sugar
   - 75 g butter
   - 200 g caster sugar
   - 1 egg
   - 1 tsp vanilla essence
   - 175 ml milk
   - 4 plums
   - 125 g blueberries

             Start by mixing the flour, baking powder and salt. For now set this mixture aside.



        In a round cake tin (23 cm in diameter) bake 50g of butter and soft brown sugar at 180 C / Gas mark 4 until the butter starts to bubble.



                  Mix the 75 g butter with the caster sugar until fluffy.



Add the egg and vanilla essence to the butter and mix everything together.



Once you have done this alternatively add a bit of milk and flour until completely incorporated.





        Cut the plums in half, remove stones and slice thinly. Arrange plums around the edges of the tin then sprinkle the blueberries.



        Pour the batter on top of the fruit covering them completely.



        Bake in the oven at 180 C / Gas mark 4 for 40 minutes or until a cocktail stick inserted into the centre of the cake comes out clean. When done take out of the oven and let it cool for 15 minutes.



        Put a plate on top of the cake and turn it upside down (careful not to burn yourself), remove the tin and cut as you wish ready to serve.
