Chicken with tomato,basil and garlic sauce ( Ostropel de pui )

This is a wonderful,light and oh so savory dish.I learned it from my grand-grandmother who used to prepare it every time i visited especially for me.The sweetness of the tomato and its acidity combine perfectly with the garlic,basil and chicken to make this the perfect recipe for comfort food.It has made many of my childhood days happy ones,as i remember the excitement of visiting her and the chance to eat this.I hope it will have the same effect on you so here it is.For this recipe you will need :

-2 Chicken thighs ( Chicken breast or wings will do just fine)
-1 Onion
-1 Carrot
-1 Tomato
-8-9 Cloves of garlic
-1 Bay leaf
-1 Bunch of parsley
-Chicken spices( A ready made mixture from the supermarket is fine)
-Basil
-Oregano
-1/2 Cup of Red Wine
- 2 Tablespoons of flour
-Sunflower Oil
-A bit of water




Preparation: Wash and clean the chicken thighs and remove the skin off them.Prepare a cooking pot and put some sunflower oil in it to heat up.Make some cuts on the chicken thighs and place them in the heated oil along with the chicken seasoning and braze on both sides.When chicken thighs have a nice brown color remove them from the pot and set them on a plate aside.In the oil that remains put the chopped carrot,after a minute or two add the chopped onion and shortly after that the chopped garlic.When the onion and garlic are browned nicely add the 1/2 cup of wine.Cook till the alcohol has evaporated then add the chicken thighs back to the pot along with the skinned and chopped tomato,the basil,oregano,bay leaf and a little water.Let it begin to boil and add the flour to it.When the chicken thighs are fully cooked and the meat begins to flake off the bone a little turn off the flame and add the chopped parsley.Serve hot with a side dish of your choice like mashed potatoes or pillaf.Enjoy your meal .
